While we can’t wait to welcome you with our delicious coffee in January, we know the real excitement lies in our upcoming beer, which will make its debut in March. Leading the charge is our founder and brewmaster, Travis Zeilstra. With over 20 years of brewing experience and a passion for quality, Travis is bringing his heart and soul back to his roots. Every batch he brews tells a story—one of tradition, creativity, and connection. From his deep respect for classic brewing styles to his commitment to using local Montana ingredients, Travis pours his expertise into every pint.

For us, it’s not about brewing a lot of beer—it’s about brewing the right beer. We’re all about small batches, big flavors, and a community-first mindset. Come March, we’ll be ready to share the fruits of our labor with you. Each sip will reflect not just decades of brewing mastery, but the pride we feel in being part of this community.

Curious about the inspiration behind our beers and what’s brewing at 1Ō5? We sat down with our founder and brewmaster, Travis Zeilstra, to get his thoughts on everything from his favorite beer styles to what you can expect when you walk through our doors. Here’s what he had to say:

Q: What inspired the creation of some of your flagship beers? Is there a personal story or experience that influenced the choice of styles or flavors?

Deep appreciation for traditional lager brewing techniques. Our team plans to pay homage to the classic styles that have stood the test of time while also infusing our unique touch to create something special with as many MT local ingredients as possible.

Q: How do you go about deciding what types of beer to brew? Is it driven by personal preferences, local trends, or something else?

By balancing several factors including inspiration from my own tastes and experiences, engaging with customers and community to understad their preferences, time of year and upcoming events also influence our brewing choices, analyzing market trends in identifying emerging styles and ingredients, and finally feedback from customers and sales data on what works and what doesn’t.

Q: How do you want people to feel when they drink your beers? Is there a specific experience or emotion you hope to evoke with each pour?

I want customers to feel a sense of joy and satisfaction due to the wonderful flavors and craftmanship that goes into each beer. When enjoying a beer with friends, family or fellow patrons a strong sense of connnection and commmunity. For new customers a spark of curiousity and discovery when trying something new or exporing the diverse world of beer. After a long day, I hope our beers provide a moment of relaxation and comfort, allowing customers to unwind and enjoy the moment. Finally, customers to feel a sense of pride in supporting their local brewery.

Q: Is there a beer you’ve brewed that holds a special significance to you? What’s the story behind it, and how do you feel it connects to the community?

The Baltic Porter because it represents a testament to resilience and adaptation. Baltic countries had to create their own porter due to supply disruptions from England. It is now enjoyed during celebrations and cold winters, symbolizing warmth, tradition and community. 1Ō5 Brewing will look to pair Baltic Porter with shared gatherings, festivals and celebrations, especially in the colder months. Hopefully, creating bonds and shared memories over a hearty, warming beer.

Q: Can you share any insights into upcoming beers or seasonal brews that you’re particularly excited about? What makes these beers special or unique to 1Ō5 Brewing?

I’m planning on creating a Kölsch style beer with traditional service, this includes using “Stange” glassware (6.8 oz), staff wearing traditional blue aprons, and only having this on specific days during late spring and summer.
